I love a good sandwich. My Mother used to say that if you put anything in between two pieces of bread I would eat it. Now this was back before I knew I was celiac but I still can get behind an amazing gluten free sandwich anytime.
This is a great recipe for anyone who has been eating the same thing everyday for breakfast. It has a ton of flavors and is super satisfying to hold you until lunch is ready.
The salmon is full of good fats that help to maintain your skin integrity. The arugula, red onion and lime all have good amounts of vitamin C to protect your skin from the suns negative effects and support collagen production.
Add in some capers or switch out radishes for carrots for a little variety and ENJOY!
Smoked Salmon Sandwich
Serves: 1
Ingredients:
2 large radishes, sliced thinly
2 tbsp red onion, sliced thinly
1/2 cup Arugula
1 tbsp parsley
1 tbsp chives*
1/2 tsp avocado oil mayonnaise
1 tsp lime juice
1 thin slice of almond flour bread (or other GF bread..I love Schar's deli sourdough)
4 oz Smoked Salmon
Instructions:
1. Toss radishes, red onion, arugula, parsley, chives, mayonnaise, and lime juice together until mixed well.
2. Toast bread
3. Top bread with vegetable mixture and salmon. Enjoy!
