Indian Chicken Curry Salad

This is not your standard chicken salad. It has nuts, it has interesting spice. AND you still get the delicious creamy texture, crunch and yum that you love about the classic chicken salad. 

The curry powder contains turmeric which has been found to have a profound effect on skin health. Its antioxidant properties have been used to treat skin issues from acne to allergic reactions. While you will have to add more turmeric to your diet to gain all of these benefits, this recipe is a great start. 

The coconut oil adds beneficial medium chain triglycerides that give your body good fats to make healthy plump new cells. 

Indian Curry Chicken Salad

Serves: 2



1, 8 oz. chicken breast

1/4 yellow onion

2 tsp coconut oil

1/4 cup of avocado mayonnaise

1 tbsp of curry powder

1/4 cup of cilantro or parsley

1 tbsp of sliced almonds or other nuts

1/2 medium cucumber, diced

1/2 teaspoon sea salt

1 tbsp of sliced almonds or other nuts

4 cups greens/salad leaves



1. Dice the onion and chicken into bite-sized pieces

2. Coat a frying pan with 1/2 tablespoon of coconut oil

3. Add in chicken and onions; cook on medium heat

4. After chicken and onions are fully cooked, place them in a bowl with remaining ingredients except greens. Mix well.

5. Plate on top of salad leaves and enjoy
