Black Bean & Avocado Salad

If you are like me then you LOVE an easy to put together but delicious salad that you can meal prep and have all week in the fridge. Just when I am dying of hunger with absolutely NOTHING to eat in the house, this magical salad appears tucked in a glass container in the refrigerator. 

It is yummy on its own straight out of the bowl but can be paired with greens for an even healthier take or with tortilla chips/crackers as a vessel to get it in your mouth. The zesty lime and creamy avocado make a perfect combination for perfection. I love to make the dressing first and then add the avocado to prevent any browning of the flesh of the avocado. 

Oh and did I mention this was super healthy too? The avocado has wonderful fats that help to keep your skin cells plump. These perfect green fruits are high in vitamins C, K, E and B to aid in immune health as well. The black beans are an excellent source of plant protein, especially when combined with a grain (like rice or rice crackers) for a whole protein. 


Black Bean Avocado Salad

Serves: 2



Juice of one orange

Juice of one lime

3 tbsp olive oil

3 tbsp mint, chopped

Sea salt to taste, approximately 1 teaspoon

1 can of organic black beans

1 cucumber

1 ripe avocado

1 medium carrot

1/2 medium red onion



1. Rinse black beans well and drain

2. Combine orange, lime, olive oil, mint in salt in large bowl. Dice avocado and mix well with citrus/oil combination.

3.Finely chop cucumber, red onion and carrots, toss in the bowl with black beans to combine

4. Eat straight out of the bowl (like me) or serve over 2 cups of greens for a delicious, nutritious, and colorful meal!
